Sinead got this recipe from a family that was staying on a boat at Acres Lake opposite our self-catering cottages (McGuire’s self-catering cottages). This is an American recipe that Sinead tweaked over the years and it still tastes as good now as it did back in 2003. We use real carrot, fresh pineapple, coconut and we roast the nuts before we add them to the batter. Whenever we want to impress or gather a crowd at a tastings event this is the cake you can rely on. Topped with a cream cheese icing and sprinkled with roasted mixed nuts, we are sure you will enjoy every crumb of this cake.
